Chicken Masala Spice Mix
This makes about 4 tspn of spice mix powder.
It was greatly reduced from a recipe found online, but the difficulty in scaling by so much meant I had to adjust the
spice proportions.
 As a consequence it will not be an exact match but produces an acceptable blend.
Ingredients

| 2 tspn coriander seeds | 1 tbspn curry leaves | 
| ½  tspn fennel seeds | ¼  tspn cardamom seeds | 
| 1 tspn cumin seeds | ¼  tspn poppy seeds | 
| ½  tspn black cumin seeds | ¼  tspn turmeric | 
| ¼  tspn black peppercorns | ¼  tspn garam masala | 
| 1 dry red chilli | to taste salt | 
| ¼  tspn fenugreek seeds |  | 
 
Preparation
- Dry roast the curry leaves until crispy and set aside.
- Brteak up the dry red chilli and dry roast until it changes colour, then set aside
- Dry roast the rest of the whole spices until they become fragrant, then allow to cool.
- Grind all the dry roasted spices to a fine powder.
- Thoroughly mix in the turmeric, garam masala and salt, add to a suitable container and keep n a dry and dark location.
