C41 Balti Sweet and Sour Chicken

This was inspired by a recipe from Shehzad Husain but adjusted to suit a single serving with ingredient adjustments and cooked using a different style. It uses pre-cooked chicken but no balti base sauce/gravy. It can be adjusted to be as hot, sweet and sour as you desire.

Ingredients

For 1 Continued...
2 tbspn oil ¼ tspn salt
½ tspn garlic (crushed) hot water as needed
½ tspn chilli powder (see note 1) 2 tspn fresh coriander (chopped)
¾ tspn garam masala 2 tspn mango chutney (see note 2)
1 tbspn tomato purée 1 tbspn lemon juice (see note 3)
1 portion c41 balti precooked chicken 2 tbspn single cream
1 tspn green chilli (chopped) 2 tbspn or yogurt

Preparation

Cooking - 6½ min

  1. Heat the oil in a wok (or similar pan) and cook the garlic, stirring, for 30 seconds.
  2. Stir in the chilli powder and garam masala and cook, stirring for 1 min.
  3. Stir in the watered down tomato purée and cook, stirring regularly, for 1 min.
  4. Add the c41 balti pre-cooked chicken, green chilli and salt and cook, stirring regularly, for 3 min, adding a little hot water as needed to maintain the desired sauce consistency.
  5. Reduce the heat and stir in the fresh coriander, mango chutney, lemon juice, single cream and yogurt and cook, stirring for 1 min.

Serving

  1. Serve with naan or rice and garnish with a little freshly chopped coriander.

Notes

(1) The chilli powder can be increased to suit your taste.
(2) Tastes vary, so sample the sauce and add more mango chutney or sugar if you want it sweeter.
(3) Tastes vary, so sample the sauce after adding the lemon juice and add more if it suits your preference - (cider vinegar can also be used to add sourness without the citrus taste).
